Madrid...a casserole of gastronomic trends and global cuisine
Madrid's cuisine has often been regarded as a composite. Here you'll find "asados" to rival any in Castilla, pintxos as inventive as those cooked in The Basque country's finest tavernas and steaks as full of flavour as their Asturian counterpart. Now, however, a distinctive cuisine madrileña has emerged, with its most evident expression is found in Madrid's tapas bars.
Estado Puro, en Plaza San Angel, a modern Tapas Bar where all traditionnal Spanish tapas have been recreated ; patatas Alioli mutate from the traditionnal chunks into boxes topped with Alioli.
Gastrocroqueteria de Chema takes a creative approach to croquetas which are filled with surprising combinations such as lamb and gorgonzola, walnuts and goat cheese, octopus and red pepper...
Classical Cerveceria Cervantes noisy, bursting with Madrileños and inevitably tourists has a great variety of authentic tapas such as Gambas al Ajillo and Boquerones al vinagre. A must-visit tapas place.
Famous among football players, artists, tv stars... Asador Donostiarra is a traditionnal, Basque rotisserie that serves traditionnal and geniune Basque cuisine such as red meats and fish.
